Combine sugar, nuts and brandy. Score the top of the cheese and place on an ovenproof platter. Bake at 200 c in a preheated oven for 4 to 5 mins, until cheese is softened. Take out of oven, mound the sugar mixture over cheese and bake a further 2 to 3 mins until sugar is melted. Serve with crackers and apple slices.
