This is a rich, decadent cheese to put on your cheese platter this Christmas! A homemade, gooey camembert filled with a rich mascarpone (also homemade!), balanced with cranberries and pistachios. Delish!
Remove Camembert from the fridge, while still cold slice in half and spread 3/4 of the mascarpone over bottom half of Camembert. Place 3/4 of the pistachio nuts and cranberries onto mascarpone and top with other half of Camembert.
Spread the remainder of mascarpone over the top of the camembert and sprinkle with remaining pistachio nuts and cranberries.
Serve at room temperature with biscotti.
