Place potato’s into a saucepan of cold water, with enough water to cover and bring to boil. Cook for approx 10 mins, drain and put into oven dish with rice bran oil. Bake in a moderate to hot oven for 30 mins, turn and bake for another 15 mins to ensure the potatoes brown evenly on all surfaces.
Remove from oven and serve by place potatoes onto a serving platter and sprinkled with thyme and salt. Add big bowl of mascarpone to the serving platter for people to add to their potato (its better than sour cream!).
