Fromagerie Guilloteau is a family-owned business (we love family owned businesses!) with two production sites located in the southeast part of France, near the Alps. Fromagerie Guilloteau was created in 1981 and are the leaders in a modern process called “ultra-filtration”. This technique occurs before the cheese making process using pasteurised milk. The milk is forced through a series of membranes, extracting protein and removing water; This results in the production of consistent, nutritionally rich cheeses that have a silkier mouth feel and creamy subtle flavour that we all love!
