LAMB CHOPPER

A rich, mild and flavoursome ewe’s milk cheese made in Holland and matured in California.

A mild cheese that still holds a lot of flavour. Buttery, caramel, creamy, nutty and sweet that lingers pleasantly. The curds are lightly cooked which creates a delicious, molten mouth feel. The pate is the colour of straw, even as it matures.

Made in Holland in a similar style to gouda, before being shipped off and matured to perfection in the USA.

Cypress Grove specialises in goat milk cheeses. When they came to expand their business, they looked at ewe’s milk as their next step. However, a reliable supply of ewe’s milk was unavailable locally. With this, Mary Keehn, owner of Cypress Grove, looked elsewhere to expand her cheese line and found her way to the dairy in Holland that happily makes this delicious cheese for Cypress Grove.

Lamb Chopper is a winner on any cheese board and will please even the fussiest of eaters.
