We hardly need to sing the praises of brie and camembert – decadent, soft, gooey, with that nutty, umani rind…when in full bloom, can anything beat these gorgeous cheeses?!
The difference between brie and camembert is simply the French region from which they originally come. It’s also the size of the cheese: brie comes in a bigger wheel, camembert is a smaller wheel. But the creation process and ingredients are the same for both cheeses.
We’ll go through all the details of the procedure from start to finish in this shorter workshop – from heating, adding culture and mould spores, to cooking and turning the curd, draining and hooping. We’ll also walk you through the brine bath, drying, growing, maturing and ageing.
You will leave the workshop confident and armed with the knowledge you need to create these beauties at home!
