Fig and Chevre Puffs

Ingrdients

  • 2 sheets puff pastry
  • 250g Chevre
  • 6 fresh figs
  • 125g rocket
  • Olive oil to drizzle
  • Juice of 1 lemon to drizzle
  • Freshly ground black pepper

Method

Lightly flour work surface and roll out pastry until approximately 20cm x 30cm, trim edges to make sure sides are straight. Cut into 12 equal rectangles and bake until puffed and golden. Spread with Chevre and drizzle with olive oil and lemon juice. Season with black pepper and top with the torn figs and rocket.
