Halloumi, Watermelon and Dukkah Skewers

Ingredients

  • 350g haloumi cut into 2cm cubes
  • ½ small watermelon cut into 2cm cubes
  • 1/3 cup pistachio dukkah
  • ½ cup mint leaves shredded
  • Extra virgin olive oil
  • Baby rocket leaves and lemon edges to garnish

Method

Brush the haloumi cubes with oil and barbeque until browned. Alternately thread the grilled haloumi and watermelon cubes onto bamboo skewers. Place on the baby rocket leaves, sprinkle with pistachio dukkah, shredded mint and serve with lemon wedges. Serves 8 as an appetiser.
