Halloumi Winter Salad

Ingredients

  • 1 x 350g Halloumi
  • 200g Cherry tomato
  • 60g Marinated Kalamata olives
  • Drizzle of olive oil
  • 1 Lemon
  • Fresh mint to garnish

Method

Slice halloumi into 1cm thick slices and pat dry with a paper towel. into a frying pan warm a little olive oil add tomato’s and cook until they start to break down, remove them from the pan and add the halloumi cook until golden on both sides place the tomato’s and olives into the pan with the halloumi to warm through. To serve place halloumi onto a serving platter scatter with tomato’s and olives, sprinkle with mint leaves and add slices of lemon.
