Solitary Island Stilton with Drunk Plums

Soitary Is stilton is a rich creamy blue when served with drunk plums, the balance of flavours is perfect, what a way to finish a summer BBQ.

Ingredients

  • 500g plums
  • 1/2 cup port
  • 1 star anise

Method

Place port and star anise in a small sauce pan bring to the simmer and set aside for a few hours or overnight to infuse the port. Wash plums and cut them in half remove the pip, place the plums cut side up pour over port mix and bake in oven or 40 mins until caramelised. Place of serving platter with cheese and serve with bruchetta or crackers.
