Don Cummings has worked tirelessly in the Australian specialist cheese industry, with a career spanning nearly 20 years, consulting with Sydney’s hottest young chefs and established restaurants such as Aria, Hilton, Tetsuya’s, Quay and Sepia to name just a few. Before making the move into the world of Artisan cheese. Don built a strong foundation cooking in fine dining restaurants across Sydney.
His desire to learn more about the cheese industry took him to Europe and North America to engage with some of the worlds leading experts in cheese production, export and appreciation. These people include: Will Studd of ‘Cheese Slice’s’ fame, shown on the ABC. Juliet Harbutt author of the encyclopaedia of cheese, Max McCalam Master Framagar and face of New Yorks Picholine restaurant and Artisanal speciality cheese store. As well Don has also studied cheese and sensory analysis with Neal Willman, Senior Lecturer at the Gilbert Chandler,Land and Food resources College Victoria.
While working closely with many of Australia’s best Artisan Cheese Producers Don currently resides on Coffs Harbour working with ‘Coastal Fine Foods’ servicing the best Restaurants and Food Retailers on the Mid-North Coast.
