Christmas Camembert

Enough mix to do 3 baked camembert

Warm baked, gooey camembert topped with rum soaked dried fruit. While the weather here is Australia is hot a this time of year, this baked Christmas Camembert reminded us of snowy winters and white christmases.

Enough mix to do 3 baked camembert

  • 1 cup of dried fruit, currents, raisins, cranberries, apricots etc
  • 1/4 cup walnuts
  • 1/2 cup dark rum (or spiced rum would work too!)
  • 3 homemade camembert

In a bowl combine the fruit with the rum, cover and let stand for 24 hours. We actually left ours to soak longer – you can whip up a batch of this a week in advance and pull out whenever needed.

Just before serving remove your homemade camembert (or use a good quality store bought) from fridge place in a cheese baker or small baking dish. Score the top of the cheese and cover with 1/3rd  the nuts, fruit and rum mix, place into a preheated oven at 180°C for about 10 minutes.

Serve your Christmas Camembert while the camembert is warm and gooey with slices of crusty bread.
