As promised last month Lyndall has been busy experimenting with different recipes and stabilisers to produce homemade coconut yoghurt. As coconut yoghurt requires a thickening agent, Lyndall had to change her mindset from being a cheesemaker back to a cook. The tried and tested recipe uses 1 dessert spoon of corn flour to thicken the yoghurt and the regular pro biotic yoghurt culture.

During the blind taste testings participants compared 3 different coconut yoghurts, shop bought, homemade, and a sweetened version. The homemade coconut yoghurt was the hands down winner with everyone preferring it over the shop bought. However it was a 50/50 split between the regular and sweetened homemade coconut yoghurt. Enjoying coconut yoghurt does not have to be an expensive, luxury treat in fact it is a lot cheaper to produce at home using your yoghurt maker.  The recipe can be found on our website.
