In a food processor place rocket garlic, macadamia nuts, blitz for approx. 1 min add the oil and lime juice blitz again for approx. 1 min. Add the parmesan and salt to season, blitz again to combine, if the mixture is to dry add a little more oil.
Cut avocado’s in half remove the seed and fill cavity with the pesto, place on serving platter with salad leaves and halved cherry tomato.
