Separate eggs have the egg yolks in a saucepan and the egg white in a mixing bowl, add sugar to the egg yolks in the saucepan and whisk until smooth and pale. Heat milk to nearly boiling slowly add the milk to the saucepan stirring constantly.
Place the saucepan on the low burner on the stove and while stirring bring the temp up to 87˚c or until the mix coats the back of the spoon, remove from heat stir in cinnamon and nutmeg, when cool place into the fridge to chill completely.
When the mixture in the saucepan is completely cool beat the cream to soft peaks and add to the saucepan stir in throughly. Whisk egg whites to soft peaks and slowly poor the contents of the saucepan into the egg whites until completely mixed. To serve pour a nip of spiced rum into a 150mil glass , add the egg nog and sprinkle with cinnamon! Serve chilled.
