Fresh and flavourful, this salad is a perfect side dish using your homemade fetta. Serve with fish, bread and white wine.
1 lettuce
1 fennel bulb
2 oranges
125g Persian fetta – homemade
1/2 pomegranate seeds only
1 tbsp finely chopped chives
1/2 cup olive oil
2 tbsp white balsamic vinegar
2 tbsp orange juice
1 tbsp lemon juice
1 tsp grated coconut sugar
Pepper and salt
Place lettuce onto a serving platter. Finely slice fennel and place on top of lettuce. Peel and segment the oranges, arrange on top of the fennel.
Garnish with pomegranate and homeamde persian fetta.
For the dressing place all ingredients in a screw top jar and shake until incorporated, drizzle over the salad and serve immediately.
