Haloumi Winter Salad

  • 350g homemadeHaloumi
  • 200g Cherry tomato
  • 60g Marinated Kalamata olives
  • Drizzle of olive oil
  • 1 Lemon
  • Fresh mint to garnish

Haloumi Winter Salad

Nothing beats warm squeaky haloumi. In Australia it often conjures up thoughts of slow Saturday’s sitting in your favourite cafe or warm summer nights with the BBQ on.

We love haloumi year round and find it extremely versatile. This light and quick salad is a great addition to a winters meal, or as an easy lunch with fresh flat bread.

Method

Slice haloumi into 1cm thick slices and pat dry with a paper towel.

Into a frying pan, warm a little olive oil. Add tomato’s and cook until they start to break down, remove them from the pan.

Add the haloumi, cooking until golden on both sides. Place the tomato’s and olives into the pan with the haloumi to warm through.

To serve place haloumi onto a serving platter scatter with tomato’s and olives, sprinkle with mint leaves and add slices of lemon.

Add salad greens if you’re wanting to fill it out a bit more.
