We can’t get enough of this summer salad right now! The warm, squeaky haloumi lends itself to the fresh summer flavours of the stone fruit salsa for an easy summer salad. A crowd pleaser at summer BBQ’S or for a relaxed Christmas lunch.
To make salsa in a bowl combine the stone fruit with onion, mint and lime juice, season with a little salt and gently toss. Set aside.
Cut your homemade haloumi into 5mm slices and toss in corn flour. In a fry pan add enough oil to just cover the pan and heat on a medium to high heat. When the oil is hot add the haloumi in batches cooking until golden.
Arrange the haloumi on a serving plater and top with salsa. Serve immediately.
