Haloumi with stone fruit salsa

We can’t get enough of this summer salad right now! The warm, squeaky haloumi lends itself to the ¬†fresh summer flavours of the stone fruit salsa for an easy summer salad. A crowd pleaser at summer BBQ’S or for a relaxed Christmas lunch.


  • 300g homemade haloumi
  • 50g corn flour
  • 1 peach halved, stone removed and finely chopped
  • 1 nectarine halved, stoned and finely chopped
  • 1 apricot
  • 10 cherries stoned and quartered
  • 1/2 a red onion very finely chopped
  • 1/4 cup torn mint leaves
  • juice of 1 lime
  • rice bran oil for frying


To make salsa in a bowl combine the stone fruit with onion, mint and lime juice, season with a little salt and gently toss. Set aside.

Cut your homemade haloumi into 5mm slices and toss in corn flour. In a fry pan add enough oil to just cover the pan and heat on a medium to high heat. When the oil is hot add the haloumi in batches cooking until golden.

Arrange the haloumi on a serving plater and top with salsa. Serve immediately.
