How to make Kefir at home

Packed with a range of health benefits, kefir is a popular addition to your home cheesemaking skill set. Not only is it easy, it’s takes less than a 1 minute of your actual time to create a delicious, healthy kefir to enjoy at home. 

Ingredients

  • 1 pinch of kefir starter culture
  • 1 litre (35 fl oz/4 cups) UHT full cream milk

Method

In a 1 litre container, combine the starter culture with the UHT milk. Leave on the kitchen bench for 10 hours, or up to 36 hours. Leave it until is has set—this will depend on the temperature.

Place the container in the fridge and allow to chill through completely.

Once chilled, it is now ready to eat.

If you want your kefir thicker, once chilled, remove the lid from the container and cover with cheesecloth. Holding down the sides tightly, turn the container out into a colander that is lined with cheesecloth and sitting in a jug or bowl, to catch the whey. Tie opposite corners of the cheesecloth over a wooden spoon and hang over a container in the fridge for 24–48 hours. Remove from the cheesecloth and your kefir is ready for making your favourite dip!

Store your kefir in an airtight container in the fridge. Your kefir will last in the fridge for up to 1 week.
