Pastry base
2 1/2 cups of self raising flour
1/3 cup caster sugar
175g cold butter chopped
1 egg
For the filling
5 large granny smith apples peeled, cored and sliced finally
1/2 cup sugar
1/2 tspn ground cinnamon
100mil of water
For the crumble
2 cups quick oats
1 cup brown sugar
1/2 cup butter

Preheat oven to 180°C (350°F).

Place the apple, sugar, and cinnamon in a large saucepan with 100 mil of water, slowly bring to the simmer and cook until apple is soft. Set aside

For pastry base, process flour, sugar and butter into a food processor, until mixture resembles fine breadcrumbs. Add egg and process until dough just comes together, if needed you can add a little cold water to the dough if it’s not coming together.

To make the crumble topping, place the sugar, oats and butter in a large bowl and rub together until just combined.

In a greased pie dish press out the pastry for the base of the pie, fill pie dish with the cooked apple then spoon the crumble mixture evenly over the apple.

Bake for 20–30 minutes, or until the crumble is golden.
