Who can go past the sumptuous, deep, savoury, umani flavour of a delicious blue vein cheese? We can’t!
The range of flavour in blue cheeses varies dramatically, from a dense buttery stilton to sweet gorgonzola. Then in a Roquefort there is also the seasonal, burnt-caramel taste of the milk, offset by a sharp salty finish. All blue cheeses have a slightly spicy, metallic tang that is complemented by the saltiness of the cheese.
Blue cheeses were originally ripened in caves, which are havens for blue moulds. As you learn on our Cheesemaking Workshops, these days cheesemakers add the mould to the milk in a powder form and pierce the young cheese to allow air to enter and the mould to grow.
Moister-interior blues develop wide uneven streaks and pockets of blue. The dryer-rind styles have a denser texture that produces a more erratic line and intense pockets of blue mould.
Blue marries well with pears, walnuts and rocket. These cheeses need wines with both oomph and sweetness to balance their bold flavours and very savoury body.
