Summer fruits & soft cheese

You’ll make this once and keep coming back for more. An easy dish for entertaining, or a nice mid-week dinner.

  • 3 pieces of stone fruit, I like to mix up the colour range. You could use plums, apricots, peaches or nectarines. Choose whatever is in season. 
  • 2 tablespoons of olive oil
  • 1 homemade camembert or a soft persian fetta
  • 4 slices of a good crusty bread, sourdough or ciabatta.


Pre heat oven to 160°C. 

Brush the bread with olive oil, place on a baking tray and pop it into the oven. Bake until bread is nicely toasted.

Cut your fresh summer stone fruit in half and remove the stone. Place the stone fruit cut side up on a baking dish and place into the oven. Bake until fruit is starting to break down.

Onto serving plates place toasted bread, fruits and slices of your choice of soft cheese, we recommend either a ripe camembert or a soft persian fetta.

Serve with a chilled white wine or prosecco.
